Chicken, Mozzarella and Basil wrapped in Parma Ham

This is one of my FAVOURITE things and is so easy to make! It’s the type of thing I cook when I feel like making an effort and feel like we are having a treat and something a bit fancy.

For two people you will need:

  • 2 large Chicken Breasts

  • 4 slices of Parma Ham

  • 80g Mozzarella

  • Basil leafs

  • Garlic

  • Oregano

  • Salt and Pepper

The first thing you want to do is cut the Chicken breast open along one side and open it up.

Then I put in slices of Mozzerella, Basil, Garlic, Oregano and season well with Salt and Pepper.

Then I lay out clingfilm on the work top, put two pieces of Parma Ham onto the clingfilm flat and put the stuffed Chicken, cut side up, onto the Parma Ham.

Then use the clingfilm to wrap the Parma Ham around the Chicken nice and snuggly. I then secure it all together using a couple of cocktail sticks.

Seal the Chicken in a hot pan on both sides so it’s nice and crisp, then pop into the oven (preheated on 180) for 20-25 mins!

We always have ours with some Wedges and Veg but it would be lovely with Pasta, Rice, Salad… anything you fancy really!
