Christmas Day Red Cabbage

Cabbage is for life not just for Christmas 👀 I LOVE Red Cabbage and making this made me wonder why we don’t have it more often. Here’s how I do mine… this amount would serve 4/6 as a side.

You will need:

  • 1 small Red Cabbage (approx 400g once sliced)

  • 1 Red Onion sliced

  • 1 tsp Mixed Spice

  • 1 tsp Garlic Granules

  • 2 Bay Leaves

  • 30g Golden Caster Sugar

  • 50ml Apple Juice

  • 50ml Red Wine Vinegar

  • 2 tbsp Cranberry Sauce

  • 2 Apples

  • small handful Pomegranate (optional)

  • chopped Parsley

In a heavy based pan, heat a little oil and add the Red Onion with a big pinch of Salt and Pepper, cook on a low heat till soft.

Add the Red Cabbage, Mixed Spice, Garlic Granules and Bay Leaves and cook for a couple of minutes.

Add the Red Wine Vinegar, Apple Juice, Cranberry Sauce and Sugar then bring to a simmer, cover with a lid and cook on a low heat for 20 minutes stirring often and replacing the lid.

After 20 minutes, grate the Apples and add to the Cabbage stirring through. Cook on a low heat with the lid off for 10 minutes, the Cabbage should be soft with a slight crunch to it still.

You can make and freeze this a month in advance or make and refrigerate it 5 days in advance. When reheating add a small knob of Butter to the Cabbage… if serving straight away then add the Butter and stir through before dishing up. Don’t forget to remove the Bay Leaves!
