Lamb Kofta Pizza Wraps with Feta and Pomegranate

These are so easy and packed with flavour! They make a nice lunch or dinner. I use Mutti Pizza Sauce to save time but if you can’t find it, some Passata with Mixed Herbs will be fine.

For 4 Pizza wraps you will need:

  • 4 Wraps

  • 400g Lamb Mince

  • 1 Red Onion sliced

  • 200g Feta

  • 100g Pomegranate

  • 1/2 tin Mutti Pizza Sauce

  • 1 tsp Oregano

  • 1/2 tsp Cumin

  • 1/2 tsp Smoked Paprika

  • 1/2 tsp Ground Coriander

  • 1/2 tsp Mixed Spice

  • 1 tsp Garlic Granules

  • Salt and Pepper

  • 12 Cherry Tomatoes diced

  • Coriander chopped

First fry off the Red Onions with a little salt until soft.

Set the Onions to one side the fry the Lamb in the same pan, once the Lamb is brown, add all the spices and a good pinch of Salt and Pepper then cook for a few more minutes.

Place some kitchen roll onto a plate then spoon on the Lamb to drain away some of the excess fat.

Put the wrap onto a large tray, add a spoonful of the Pizza Sauce, some fried Onions, the crispy Lamb and some Feta, then cook in the oven on 200′ for 8/10 minutes.

Finish with Pomegranate, diced Tomatoes and chopped Coriander.
