Luxury Fish Pie

Now I’ve already got a Fish Pie recipe on my blog, back from the Slimming World days… I will link it here for anyone who would prefer a ‘healthier’ recipe… but let me be completely honest, this version is much much better, I just kind of feel like a Fish Pie should be totally indulgent, creamy and cheddar Mash for the win.

This makes enough for a family of 4 but me and Kieran had extra helpings with some left over for lunch for Isla the next day… I’m not sure Abbie would eat it but then again I didn’t even try her with it, but I’ll definitely be making it again very soon for all of us.

You will need:

  • 100g Haddock, skin removed, diced into chunks

  • 100g Salmon, skin removed, diced into chunks

  • 100g Tiger Prawns

  • 4 Spring Onions, thinly sliced

  • 100g Peas

  • 50g Butter

  • 50g Flour

  • 500ml Milk

  • 100ml Cream

  • 1 Lemon

  • 1/2 tsp dried Chives

  • 1/4 tsp dried Dill

  • Salt and Pepper

  • Fresh chopped Parsley

For the Mash:

  • 6 large Potatoes cut into small, even chunks

  • 1 Egg

  • 40g Cheddar, grated

In a pan melt the Butter, add the Flour and cook into a paste. Cook for 2-3 minutes.

Add the Milk gradually, stirring constantly to create a smooth sauce and simmer for 3 minutes.

Add the Cream and the juice of the Lemon. Add Salt and Pepper to the sauce at this stage to check the seasoning before you add the Fish.

Add the Fish, Prawns, Spring Onions, Peas and Herbs. Mix together and transfer to an oven proof dish.

For the Mash, boil the Potatoes until soft in salted water. Mash then mix in the Egg and Grated Cheddar, add Salt and Pepper to taste.

Top the Fish with the Mash, you don’t have to pipe it, I just find it a lot easier than spreading it on.

Bake in the oven on 180′ for 20-25 minutes.

And thats it! We had it with some Green Beans and it was so good, proper comfort food.
