Mini Egg Brownies

Mini Egg season is here. I think these are possibly one of the nicest things I’ve ever had in my mouth, I warmed one up in the microwave and had it with vanilla ice cream and I can’t stop thinking about it.

  • 240g Mini Eggs

  • 180g Unsalted Butter

  • 180g Dark Chocolate

  • 3 Medium Eggs

  • 250g Golden Caster Sugar

  • 80g Plain Flour

  • 40g Cocoa Powder

  • 50g White Chocolate

Melt the Butter and Dark Chocolate together in a heat proof bowl over simmering water then set to one side to cool slightly.

Whisk together to Eggs and Golden Caster Sugar till thick and creamy.

Add the Eggs and Sugar to the melted Chocolate and Buttr, folding in gently till combined.

Sieve the Flour and Cocoa Powder into the mixture then fold in gently till combined.

Put the Mini Eggs into a sandwich bag and use a rolling pin to roughly break them up, add around 2/3 to the cake mixture saving the rest for once the brownies are cooked.

Grease and line a 20cm x 20cm tin, add the mixture to the tin then bake in the oven on 180’ for 35 minutes.

Once out of the oven, add the remaining Mini Eggs on top pushing down slightly. Leave the Brownies to cool completely in the tin.

Melt the White Chocolate then drizzle on top, cut into squares… I cut mine into 9 but you could make them smaller if you want to, I can’t promise you still won’t eat them all!!!
