Slow Cooked Beef Ragu and Parmesan Polenta

My last ever recipe in my old kitchen!! Ahh so exciting and can’t wait to be able to cook again properly at home, this was a bit of a corker to go out on. Think luxury Bolognese with all the flavours and slow cooked shredded up Beef. The kids loved it too and I would have it with Pasta, Gnocchi, Potatoes, Rice it’s one of those that just goes with everything.

For 4 people you will need:

  • 600g diced Beef

  • 1 Onion finely diced

  • 2 sticks of Celery finely diced

  • 1 Carrot finely diced

  • 2 Beef Oxo

  • 1 tsp Oregano

  • 2 tins Chopped Tomatoes

  • 1 medium glass Red Wine

  • 2 tsp Balsamic Glaze

  • 1 tsp Sugar

  • Salt and Pepper

First seal the Beef off in a heavy based casserole dish then set to one side.

Then in the same pan sweat the Onion, Celery and Carrot with a good pinch of salt for 5-10 minutes.

Add the Oregano and Red Wine then reduce the wine right down.

Add the Beef back in with the chopped Tomatoes and half a tin of Water.

Add the Beef Oxo, Balsamic Vinegar and Sugar then mix all together and simmer on a low heat with the lid on for 4 hours.

Use a wooden spoon to help break up the Beef and cook with the lid off to reduce the liquid for another hour.

For the Polenta I just followed the packet instructions, but used half Milk half Water, so 250ml Milk, 250ml Water bring to the boil then add 8 tbsp of Polenta whisking in then cook for 10 minutes stirring often with a wooden spoon. Then I added 60g grated Parmesan and Salt and Pepper to taste.

And that’s it!

I topped mine with some fresh Basil, it was so good but I’m definitely more a Pasta/Gnocchi girl at heart and will be trying that next time with it.
