Spring Green Spaghetti
If you come here often, you will know I’m a huge fan of speedy pasta dishes. With the weather outside daring to warm up and the season changing, we are now entering one of my favourite food seasons… Spring!
For this recipe I used Spring Greens (which is a type of cabbage), Asparagus and Green Beans but you could use whatever Greens you like. It’s really quick and really yummy… you could have it on its own or with some Chicken or Salmon if you fancied.
For 1 person you will need:
75g Spaghetti
1 Spring Green Cabbage sliced thinly
5-6 Asparagus sliced
small handful of Fine Green Beans sliced
1 tsp Garlic chopped
1/2 tsp of Chilli chopped
1 Lemon
2 Spring Onions sliced
Olive Oil
Salt and Pepper
Parmesan
Put the Spaghetti on to boil in salted water.
Heat a large frying pan and add a little drizzle of Olive Oil. Start frying the Garlic and Chilli, once the Chilli starts to brown add in all the Veg with a pinch of Salt and Pepper and fry off.
Add a little water from the Pasta to the Greens to help them along and grate in the zest of the Lemon.
After the Spaghetti has been cooking for around 8 minutes, drain and add to the Greens, check the seasoning then serve with the Spring Onions and a little Parmesan on top.
It’s that simple. I had mine with a Salmon Fillet and it was the perfect combination!
