Sweet Potato and Vegetable Pakoras
Curry night at my friends is my absolute fave. It usually involves Butter Chicken, Pilau Rice, endless Poppadoms, Wine and Naan Bread! But as it’s January, all my besties are doing slimming world (yay) and we are all skint from Christmas.
So we decided a bring your own dish, slimming world friendly curry night would be a good idea! I have made these before but just with white potato so thought I’d try some sweet potato ones for a change.
For 24 Pakoras you will need:
3 Potatoes
3 Sweet Potatoes
3 Carrots
2 Red Onions
1 Courgette
Peas and Sweetcorn (small handful of each)
2 tbsp Curry Powder
2 Eggs
Salt and Pepper
First I baked the potatoes till cooked then scooped the potato out of the skin. I finely sliced the red onions and grated the carrot and courgette.
Mix all the potato and veg together with the curry powder and add salt and pepper to taste. Then add the eggs… (I used both but would probably only use 1 next time as the mixture was slightly too wet which makes it hard to work with!)
Next I heated a non stick pan sprayed with fry light and fried them off 4 at a time, you want the pan to be a medium heat and turn them after around 3-4 mins and fry the other side.
Transfer onto a tray lined with grease proof paper. If you are eating right away pop into the oven on around 180c for around 5 mins to finish off. I refrigerated mine ready to reheat later so will pop them in the oven for 10 mins when we want them!
These are great as a side dish or a starter and really good with Coriander, Mint and Cucumber Raita. Which is just fat free yoghurt, chopped cucumber, coriander and mint mixed together! Enjoy 🙂
