Fish Pie

Feel like Iโ€™m just churning out alllllll the comfort food for these cold days rolling in! Another pie recipe ๐Ÿ˜‚๐Ÿ™Œ๐Ÿป.

You can use any fish you like for this, I used Smoked Basa, Basa and Salmon as Basa is a lot cheaper than other white fish and I got it in Aldi for anyone trying to find it.

I have also cheated a bit and included a recipe from BBC Good Food but this is exactly how I make my White Sauce the only difference is I use half milk/half water to reduce the milk content in the sauce and add a Fish Stock Cube for this particular recipeโ€ฆ so itโ€™s half White Sauce half Fish Veloute but anyway you get the jist, you could use all Milk if you like!

For 4 individual Fish Pies or one big one, you will need:

  • 6 Baking Potatoes

  • 1 Salmon Fillet

  • 1 Smoked Basa Fillet

  • 1 Basa Fillet

  • 1 Leek

  • 1 Lemon

  • Parsley

  • White Sauce (I made this amount but didnโ€™t need it all)

  • Salt and Pepper

First I bake the Potatoes, then once cooked through, scoop out the cooked potatoe and mash it with an Egg and some seasoning. Pop it in a piping bag and keep it wrapped up so itโ€™s still hot when piping it onto the Pie, itโ€™s a lot easier to work with if itโ€™s still hot!

Next up make the White Sauce, dice the Fish and Leek and chop the Parsley. I usually do this whilst the Potatoes are baking to save time!

Sweat the Leeks in a pan with a good pinch of Salt and Pepper.

Add the diced Fish and the White Sauce with a squeeze of Lemon Juice.

Add some Frozen Peas and the chopped Parsley.

Transfer the Fish Pie mix into dishesโ€ฆ I used individual ones and then froze the leftovers into portions for future meals.

Pipe on the Mash and bake in the oven for around 20 minutes on 180.

Hope you enjoy it!
