Tomato Sauce

This recipe is so adaptable, I make it often out of odds and sods leftover in the fridge, most veg will work as the base of the sauce I have made it before using a bit of leftover Butternut Squash once that was a nice combo!

I usually keep mine in the fridge up to 5 days prior to making it (then freeze anything left) and use it for a variety of things throughout the week but obvs my favourite thing is pasta! This recipe acts as a great base to any pasta dish and the kids love it too.

This makes around 8 portions

  • 1 Onion diced

  • 3 sticks of Celery diced

  • 1 Carrot grated

  • Button Musrooms

  • 1 tin of Plum Tomatoes

  • 1 carton of Passata

  • 1 Chicken or Beef Oxo

  • 1 tsp Mixed Herbs

  • 1 tsp Smoked Paprika

  • 2 tsp Balsamic Glaze

  • Salt and Pepper

First sweat all the veg in a pan for a good 10minutes with a pinch of salt and pepper.

Add the Oregano, Oxo and Paprika and cook for another minute.

Add the carton of Passata, fill the empty carton with about an inch of water and give it a shake then add to the pan (don’t want to waste anything plus the water helps the sauce), add the Plum Tomotoes and fill the tin half way with water again adding to the pan.

Simmer for around 30 minutes then finish with the Balsamic Glaze.

You can blend it or leave it chunky but if I blend it I only do it roughly.

And that’s it!

This amount makes loads and I have been eating it for lunch all week with all different combinations.
