Leek and Bacon ‘Mac & Cheese’

I basically think anything would taste good with Pasta and Cheese. You can’t go wrong. This really hit the spot and was a welcome quick and easy dinner on a rainy August (!!) evening.

For 2/3 people you will need:

  • 175g Pasta

  • 3 Leeks sliced

  • 5 slices of Bacon

  • 30g Cheddar grated

  • 30g Parmesan grated

  • 30g Plain Flour

  • 30g Butter

  • 350ml Milk

For the topping

  • 10g Parmesan

  • 10g Grated Mozzarella

  • 10g Breadcrumbs

In a pan melt the Butter, add the Flour and stir into a paste. Cook for a few minutes and then gradually add the Milk stirring continuously, simmer on a low heat until sauce consistency.

In another pan add the Pasta to boiling, salted water and cook for 6/7 minutes.

Whilst the Pasta is cooking, grill the Bacon until crispy then roughly chop.

After the Pasta has been cooking for around 7 minutes, add the Leeks and cook for another minute.

Add the Cheddar and Parmesan Cheese to the white sauce and season to taste.

Drain the Pasta and Leeks then add the Cheese sauce and the chopped Bacon stirring through.

Transfer to an oven proof dish, top with the extra Parmesan, the grated Mozzarella and Breadcrumbs.

Bake for 20 minutes on 200’.
