Mango and Lime Chicken Skewers

Nothing makes me happier than finding a new meal that my whole family like! This was inspired by a meal out I had at the weekend and I was hoping and praying I could recreate it into a family meal and I think I nailed it if I do say so myself!

This is so quick and easy which again, makes me very happy. I only marinated the Chicken for a few hours but next time I will do it overnight.

For 4/5 portions you will need:

For the Chicken Skewers

  • 4 Chicken Breasts diced

  • 1 Mango

  • 1 Lime

  • 1/2 tsp Cumin

  • 1/2 tsp Turmeric

  • 1 tsp Salt

  • 50g Plain Yoghurt (I used 0% Fat Greek)

  • 1 tbsp Rapeseed Oil

For the Mango Salsa

  • 1 Mango

  • 1 Tomato

  • 1/3 Cucumber

  • 1 Red Onion

  • 1 Lime

  • handful Coriander

  • Salt and Pepper

For the Chicken Skewers, peel and dice the Mango into chunks then put into a blender with the juice of 1 Lime, Spices, Salt, Yoghurt and Oil.

Blend till smooth then cover the diced Chicken. Clingfilm and leave to marinate in the fridge for at least 3 hours, longer/overnight if you can.

Skewer the Chicken onto metal skewers then grill for 15 minutes turning regularly till the Chicken is cooked through.

For the Mango Salsa, dice the Red Onion, Cucumber and Mango, remove the seeds from the Tomato and dice that too.

Mix together with chopped Coriander, the juice of 1 Lime, Salt and Pepper.

We had with Basmati Rice and some Sweet Chilli Sauce, next time I will have with some Yoghurt and Mango Chutney on the side.
