Parsnip and Carrot Soup

I love a soup and always have veg lying around to use up.

I have been craving parsnips randomly this week so thought I would use them up for a soup!

I used:

  • 4 large parsnips

  • 1 carrot

  • 1 onion

  • 3 sticks of celery

  • 1 leek

  • 2 chicken stock cubes

  • Salt, Pepper and Sweetener

I sweated all the veg with a good punch of salt in a large pan for a good 5-10 mins, then added the chicken oxo and covered the lot with water.

I simmered it for around 20 minutes and then blended it up, adding more chicken stock till it was a consistency I like!

I added salt and pepper to taste and a teaspoon of sweetener.

Soups are a great way to get in lots of veg and this was so nice and creamy considering it was butter and cream free!
