Peanut Chicken Satay Skewers

These are RIDICULOUSLY easy and so tasty. We all ate them and loved them. I think they are sort of thing that I would make a load up on a Monday and have for lunches or even a snack.

For 4 people you will need:

  • 3 x large Chicken Breasts

  • 3 tbsp of Peanut Butter

  • 3 tbsp Sweet Chilli sauce

  • 2 tbsp Soy Sauce

  • 1 tbsp Sesame Oil

  • 50ml Coconut Milk

  • Pinch of Salt

Dice the Chicken into cubes and mix all the other ingredients in a pan warming slightly.

Add the marinade to the Chicken and leave for an hour.

Skewer the Chicken, I cut my skewers down so they fit into a frying pan or you could just buy shorter skewers! Keep any leftover marinade.

Seal the Skewers off in a hot frying pan. They only need 30 secs – 1 min each side you don’t want to burn them. Place them onto a baking tray, then drizzle over any remaining marinade.

Cook in the oven on 180′ for 15 minutes. We had ours with some Wholegrain Rice (one of the Uncle Ben’s microwavable pouches) and Stir Fried Veg or Salad. If you want some extra sauce I would double up the marinade then set half of it to one side and use half for the chicken. So so easy and really yummy!
