Quickie Carbonara

The name says it all really!

I watched a cooking show the other night and they were in Italy where they went to an authentic Roman restaurant and the chef made Carbonara and all I could think was I NEED this in my life.

Its super quick and easy and I’ve added Broccoli to get some veg in but it’s totally optional.

For 2 people you will need:

  • 4 slices of Smoked Back Bacon cut into lardons

  • 2 Eggs plus 1 Egg Yolk

  • 150g Spaghetti

  • 60g Parmesan grated

  • 1 small head of Broccoli cut into florets

  • Salt and Pepper

Bring some water to the boil in a large pan with a good pinch of Salt and heat a non stick frying pan.

Add the Spaghetti to the boiling water and the Bacon to the frying pan, I don’t use any oil as I leave the fat on the Bacon. Keep the Bacon moving so it doesn’t burn and cook it until crispy, then set to the side.

Meanwhile mix the Egg, Egg Yolk and most of the Parmesan in a large bowl.

After the Spaghetti has been cooking for around 6-7 minutes, add the Broccoli to the pan and cook for a further 2 minutes.

Add the cooked Bacon to Egg and Parmesan mixture and drain the Spaghetti and Broccoli saving some of the cooking water.

Add the Spaghetti and Broccoli to the Egg mixture in the bowl and use some tongs to toss and mix everything together. The heat from the Pasta will cook the Egg mixture perfectly without scrambling it and I add a couple of spoons of the Pasta water and it becomes a nice silky, creamy sauce.

Plate up with the remaining Parmesan on top and some Black Pepper.

And that’s it! It took 15 minutes tops and tasted so so good! Hope you enjoy!
