Sausage Ragu Pasta Sauce

Pasta is hands down my favourite thing to eat. It can sometimes feel quite repetitive and I find myself having it the same way over and over… This recipe is similar to bolognese just using sausage meat instead of mince… I think I prefer it as it has more flavour! It’s a great recipe for getting your veg in, my 3 year old loves it and it makes me happy when she is eating veg, even if I have had to ‘hide’ it!!!

For 2.5 people (with leftovers!) you will need…

  • Low fat sausages

  • 3 Carrots

  • 3 sticks Celery

  • 1 Onion

  • 2 tins Tomatoes

  • 1 carton Passata

  • 2tsp Lazy Garlic

  • Basil

Finely dice the veg and squeeze the sausage meat out the skin.

Sweat the veg and the garlic with a pinch of salt in a large pan for 5-10 mins, keep it on a low heat and keep stirring!

Add the sausage meat and cook off for 5 minutes turn the heat up and keep it moving breaking it up with the spoon.

Add the tins of tomatoes and carton of passata, then simmer for 15/20 mins.

Check the seasoning adding salt, pepper, balsamic and sweetener to taste. Add to freshly cooked pasta stirring through.

Top with Parmesan and chopped Basil.
