Sausage, Sweet Potato and Butter Bean Cassoulet

This is a great recipe for batch cooking a whole lot of and freezing for lazy evenings! It is also one of those things that is perfect for an Autumn evening, proper comfort food… we usually have it with crusty bread and butter or garlic bread but it’s great and very filling just on its own!! This is great for adding extra veg too like Peppers/Courgette/Mushrooms it’s so versatile.

This recipe makes approx 4/6 portions…

You will need:

  • 6 good quality Sausages

  • 1 Onion

  • 1 Sweet Potato/ 1 Pepper

  • 2 tins Chopped Toms

  • 1 tin Butter Beans

  • 2 cloves Garlic minced

  • 1 tsp Oregano

  • 1 tbsp Balsamic Glaze

  • 1 tbsp Red Pesto

  • fresh Herbs (Basil or Parsley)

Dice up the Onion and Potatoe and squeeze the Sausage Meat from the skins into chunks, I squeeze each Sausage into 4 Sausage balls

Fry the sausage meat in a large pan  until nicely coloured and sealed.

Add the potato and onion and cook for a few minutes.

Add the garlic and oregano and cook for a couple of minutes.

Add the 2 tins of chopped Tomatoes and the Butter Beans along with the water in the Butter Bean and simmer for 20 minutes, stirring occasionally.

Add the Balsamic Glaze and Red Pesto along with salt and pepper to taste and simmer for another couple of minutes.

Finish with freshly chopped Parsley or Basil and serve. I have mine with some grated Parmesan or Feta on top too 🤩 and some crusty bread and butter.
