One Pot Chicken and Veg Biryani

First of all I cant believe I have never made Biryani before. It is so simple and one of those really adaptable recipes that is great for using up any leftovers or veg on the way out in the fridge.

I used some Chicken, Broccoli, Sprouts and Mushrooms but you could use pretty much anything. It all goes into one pot and cooks with the rice so just take into account the cooking time and the size you chop your ingredients.

For two very decent sized portions you will need:

  • 2 Chicken Breasts diced

  • 150g Rice

  • 1 Onion diced

  • 150g Veg, I used Brussels cut in half and Broccoli in small florets

  • 75g Mushrooms sliced

  • 1/2 tsp Tumeric

  • 1 tsp Curry Powder

  • 2 Chicken Oxos

  • 450ml Water

  • 15g Flaked Almonds

  • Coriander

Sweat the Onion on a gentle heat with the Spices and Chicken Oxo. Once the Onions are soft, add the Chicken and Mushrooms and brown off.

Add the Rice and Vegetables along with the Water and give it a good stir. Bring to the Boil and simmer uncovered for 5 minutes, then cover with a tight fitting lid and simmer for 5 more minutes. In the meantime lightly toast your flaked Almonds, you can do this in a pan or in the oven.

After the 5 minutes the liquid should be nearly all absorbed. Give it another stir, turn off the heat, put the lid back on and leave to stand for 10-15 minutes.

Top with your Almonds and some fresh Coriander and thats it. SO simple and minimal washing up.

This was so good, I could of just sat and ate bowl after bowl and Isla really enjoyed it too which is always a bonus!
