Toad in the Hole with Mustard Mash

Ahhh this is such a winter warmer and a favourite of mine! I used Muscle Food Sausages and it still turned out lovely. I have this thing about wholegrain Mustard in Mash… if you haven’t tried it, give it a go it is SO good and goes with Sausages perfectly.

For two people you will need:

  • 4 Sausages

  • 80g Plain Flour

  • 1 Egg

  • 90ml Semi Skimmed Milk

  • pinch of Salt

  • 500g peeled Potatoes (Reds make great Mash)

  • 1 Egg

  • 1 tbsp of Wholegrain Mustard

Put the Sausages into an oven proof casserole dish sprayed with oil spray and put into the oven for 15 minutes on 200’.

Whilst the Sausages are cooking, put the Potatoes on to boil with a large pinch of Salt and mix up the batter. To make the batter, put the flour and a pinch of salt into a bowl, make a well in it, add the egg, whisk together then add the milk slowly whisking as you go.

Keep checking the Potatoes whilst they are cooking, mix 1 Egg with 1 tbsp of Wholegrain Mustard… this is to add to the Potatoes once they are mashed, it gives the Potatoes a creamy texture without using Butter or Cream.

After 15 minutes take the Sausages out of the oven and add the Batter. Then pop it back in for 25 minutes.

Once the Potatoes are cooked, strain them and leave in the colander for a few minutes so the steam really drys them out, I always do this so I don’t have a watery Mash! Mash the potatoes then stir in the Egg and Mustard, cover and set to one side.

And that’s it! I have mine with some Veg and Gravy… proper winters evening comfort food and a family favourite too.
