Savoury Vegetable Rice

This is honestly the first time I’ve made this at home!

I usually always buy those packet ones, as they are so easy! But I had everything in for a homemade one packed with fresh veg so thought I would make up a batch for dinner and have with my lunches for a couple of days.

For about 5-6 portions you will need:

  • 1 onion

  • 1 red pepper

  • 1 carrot

  • 8 mushrooms

  • Handful of frozen peas

  • 200g long grain rice

  • 400ml chicken stock

  • 1/2 tsp each of Cumin and Paprika

 Finely dice up all the veg.

Sweat the onions, carrots and peppers for around 5 minutes, then add the mushrooms.

Sweat for another minute or two then add the rice, spices and chicken stock.

Cover with a lid and simmer for 5 minutes. Add the peas.

Simmer for another, 5 minutes. Turn off the heat and leave to stand for 5 minutes with the lid on. I added a good pinch of salt and pepper at the end.

This was really yummy and I had it with Fajita Chicken, Veg and Salad.

Will have some tomorrow for lunch cold with some grilled Salmon!
