Minced Beef Hot Pot
This is a cross between a Cottage Pie and Hot Pot and so yummy. A crowd pleaser in our house as it’s quite old school Meat and Veg always seems to keep Kieran happy and as the veg is all hidden inside gravy so Abbie always eats it up which is a bonus.
Baked Eggs
This recipe is so adaptable to whatever you want with your eggs! Aslong as you have the Tomato Sauce and the Eggs you are pretty good to go.
Mayflower Curry and Egg Fried Rice
This is so well known and so easy to make but also one of my favourite ‘fakeaway’ meals… it tastes a lot naughtier than it is! I have it quite often and thought I would pop my recipe on here for anyone who hasn’t tried it before.
Smoked Salmon, Sunblush Tomato and Dill Risotto
I feel like I say this about a lot of food. But this really is one of my absolute favourites! The combination of Salmon, Tomato and Dill is just a winner, I love the flavour of the Sunblushed Toms instead of using fresh Toms… if you do use fresh Toms go for Cherry Tomatoes cut in half.

Sausage Ragu Pasta Sauce
Pasta is hands down my favourite thing to eat. It can sometimes feel quite repetitive and I find myself having it the same way over and over… This recipe is similar to bolognese just using sausage meat instead of mince… I think I prefer it as it has more flavour! It’s a great recipe for getting your veg in, my 3 year old loves it and it makes me happy when she is eating veg, even if I have had to ‘hide’ it!!!

This is a great recipe for batch cooking a whole lot of and freezing for lazy evenings! It is also one of those things that is perfect for an Autumn evening, proper comfort food.
Chicken and Mushroom Taglitelle, Creamy White Wine Sauce
I went out for dinner ALONE with the other half this week for what felt like the first time in ages!!! Being pregnant, I did something I never usually do (because I usually drink too much wine to fit in all the food I want) and had three courses! It was so good and I loved my main so I thought I would try and make a slimming friendly version… It was just as good (if not better 😏)
and will definitely be a regular on the menu in our house from now on.
Smoked Haddock, Leek and Pea Risotto

I usually just chuck it all together but thought I would write it all down with amounts for an easy to follow recipe.
