Leek and Gorgonzola Risotto
This is one for the Blue Cheese loverrrrrs. I am firmly in the Blue Cheese camp, I bloody love it, and this creamy Risotto really hit the spot.
Creamy Honey and Mustard Sausage Pasta
I love it when I make new Pasta dishes that I’ve not had before and they turn out so good. If you didn’t know I am a bit of a Pasta addict and this didn’t disappoint.
Healthy Chicken Shish
Chicken Shish is my go to healthy choice if I’m being really good but just simply can’t be bothered with the cooking and the washing up!
Toasted Chicken Caesar and Parmesan Wraps
This made such a nice dinner for a warmer evening! I love the flavours of Chicken Caesar and I love a Chicken wrap so this was the perfect combo and really easy to make. I used to make a Slimming World Toasted Twister which I’ve linked here, I used to love making these but this version is a lot simpler.
Creamy Bacon and Courgette Gnocchi
I think Jamie Olivers food has to be up there with my favourites, all his books are amazing and the food photography is just #goals for me… I was having a little scroll of his pasta recipes and came across an old favourite of mine that I had completely forgotten about from his Jamie At Home book… Courgette Carbonara (I will link it here for anyone who wants to try the original recipe).
Teriyaki Salmon and Satay Noodles
Stir Frys are one of those things we have once in a blue moon and I’m always like WHY don’t we do this more often!? They are ridiculously easy, full of flavour and a crowd pleaser in my house.
Seabass with Salsa Verde
This is the perfect Lunch/Light Dinner for Spring… I made it just for myself but the amounts for the Salsa Verde would serve around 8-10 people. It is packed with flavour and goes amazing with any Fish but is also really great with Steak.
Easy Peasy Enchiladas
My favourite food in the entire world is Italian… BUT Mexican is a very very close second. I LOVE Mexican Food so when I make healthy quick versions of it I’m basically just chuffed with myself.
Chicken and Mushroom Arancini
This is a recipe that requires a bit of effort and a little bit of a ‘faff’ as like to say, but worth every single minute of faffing because it is absolute food heaven.
Quinoa and Feta Stuffed Peppers
This was a really light lunch for me… I feel like if I make it again I would add some Kidney Beans or maybe have them with some cooked Chicken as it didn’t quite hit the spot despite being yummy, I’m a bit of a carb whore so needed a bit more oomph!
Spring Green Spaghetti
If you come here often, you will know I’m a huge fan of speedy pasta dishes. With the weather outside daring to warm up and the season changing, we are now entering one of my favourite food seasons… Spring!
Herb Crusted Cod with warm Nicoise Salad
Today felt like actual Sring. There was sun and it actually felt a little bit warm outside. I’ve been wanting to make this for a while and it didn’t feel too summery because the salad was warm!
Beef Kofta Curry with Sag Aloo and Coriander Rice
This was another new one for us, it’s quite mild but if you like a bit of kick add some Chilli! The kids weren’t overly keen, Abbie didn’t eat any of the Curry and Isla didn’t eat any of the Rice… you can’t win them all!
Lemon Paprika Salmon Pappardelle with Courgette and Cherry Tomatoes
I am a HUGE fan of quick Pasta dishes for Lunch and this one didn’t disappoint! I struggled to find the dry version of Pappardelle but tracked it down in good old Sainos.
Pork and Mushroom Stroganoff with Wholegrain Mustard and Creme Fraiche
This is another dinner I don’t think we have ever had and another dinner that I think will become a firm favourite in our house. Both the kids ate it and it would be lovely with Rice, Pasta or even on top of a Jacket Potato.
Slow Cooker Chunky Beef Chilli
My Dad always used to make this and I always used to turn my nose up at it! I was a die hard Beef Mince girl and never really liked Casserole Beef, isn’t it funny how what you like to eat changes as you get older.
Asda Meals Made Freezy
So, let me begin by saying that I cook fresh everything. I use Frozen Peas and Frozen Fruit for smoothies… but thats about as Frozen I go. Being a Chef and knowing a thing or two about food (I like to think!) the saying ‘fresh is best’ comes to mind.
Creamy Chicken and Broccoli Stuffed Pasta Shells
Is there anything better than baked pasta of ANY kind?! No, no theres not. This was inspired by a (very) complicated recipe I stumbled across on Pinterest. It looked so good but had about 1569 ingredients and a lot of faffing around so I’m extremely pleased with how this came out considering it was a first timer and I definitely winged it.
Prawn and Chorizo Risotto
Sweat the Shallot on a low heat for 5 minutes, then add the Garlic and cook for a couple of minutes.
